fix: make controller GUIDs match old SDL2 GUIDs

This MR makes the GUIDs match what they were before SDL3 got merged, so that users updating from SDL2 versions won't have to rebind inputs.

However, this does break the current stored GUIDs in SDL3 versions, and they will need to bind it again.
